Vegan Tofu Stir-Fry: A Colorful and Nutritious Meal



This Vegan Tofu Stir-Fry is packed with colorful vegetables and flavorful tofu, making it a perfect meal for anyone looking for a nutritious and satisfying vegan option. It's quick to prepare and can be customized with your favorite veggies.


Ingredients:

  • 200g firm tofu, cubed

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 cup broccoli florets

  • 1 carrot, sliced into thin strips

  • 2 tablespoons soy sauce

  • 1 tablespoon sesame oil

  • 1 garlic clove, minced

  • 1 teaspoon grated ginger

  • Sesame seeds and fresh cilantro for garnish


Instructions:

  1. Prepare the Tofu: Press the tofu to remove excess moisture, then cut into cubes.

  2. Cook the Tofu: Heat sesame oil in a large pan over medium-high heat. Add the tofu cubes and fry until golden on all sides. Remove and set aside.

  3. Sauté the Vegetables: In the same pan, add a bit more oil if needed, then sauté garlic and ginger for about a minute. Add all the vegetables and stir-fry until just tender.

  4. Combine and Season: Return the tofu to the pan, add soy sauce, and toss everything together until well coated and heated through.

  5. Garnish and Serve: Sprinkle with sesame seeds and fresh cilantro before serving.
